Txotx!
Spring is cider season in Basque Country. Local cideries - sagardotegis - open their cellar doors and yell out “txotx!” the customary invitation to come drink their freshly fermented ciders straight from giant chestnut casks. The ciders, each one unique and alive, are washed down with an epic meal of chorizo, cod omelets, ribeye steaks, walnuts, quince jam, and a baguette-like piece of bread that’s as long as the communal table it rests on. It’s boisterous, slippery, and delicious, a tradition rooted in centuries of cidermaking and bursting with laughter, wonder, and pride.
We’re teaming up with Shiretown to bring txotx to our community. Inspired by an incredible experience that we had at Lizeaga Sagardotegia while on our honeymoon, we’ll be pairing four of our ciders with a traditional Basque meal prepared and hosted by Kevin and Dani at Shiretown.
