Filtering wine- the final steps
We’re getting ready to bottle our 2013 wines, and Chris has been working on all the final steps. The biggest task is racking and filtering each wine.
The wine has been aging and resting through the winter, and the lees and other natural sediment has collected at the bottom of each tank. “Racking” means gently transferring wine from one tank to another, leaving that sediment behind.
At the same time, Chris filters the wine to remove smaller particles, like any leftover yeast that could re-start a fermentation when the wine comes to room temperature. Click on thumbnails below for the full photos.
